"NASI MINYAK"
"Nasi Minyak" is the most popular menu during wedding ceremony among Malaysian. It is best served with "Ayam Masak Merah" and "Acar Timun" or "Jelatah". Nowadays people has made this dish as regular meal and we can get this "Nasi Minyak" at the restaurants and food courts. Today, I would like to share with the readers how to prepare this "Nasi Minyak" and with all the side dishes.
NASI MINYAK
INGREDIENTS:-
1.) 7 Cups of Basmathi Rice - Wash and toss
2.) 2 tbsp of Ghee or "Minyak Sapi"
3.) 2 tbsp of Planta Margarine
4.) Anise, Cinnamon and Cardamom
5.) 3 pcs of "Pandan" Leaf
6.) 2 pcs of Red Onion - Chopped
7.) 2 pcs of Garlic - Chopped
8.) 1 inch of Ginger - Sliced
9.) 3/4 can of Condensed Milk
10.) Salt
11.) Food Coloring - Yellow Egg Yolk
PREPARATIONS:-
↬ Heat up the rice cooker and put the Ghee and Planta Margarine.
↬ Saute the anise, cinnamon and cardamom together with the onion and garlic until fragrant.
↬ Pour the rice into the rice pot and stir for awhile.
↬ Pour the condensed milk into the rice.
↬ Add in the food coloring and salt to taste.
↬ Add enough water and put on the lid.
While waiting for the rice to cook well, let's prepare the "Ayam Masak Merah". This dish is my brother's favourite because of the taste which is hot and spicy.
AYAM MASAK MERAH
INGREDIENTS:-
3.) 1 pcs of Cinnamon
4.) 60 ml of Coconut Milk (optional)
5.) 250 ml water
6.) 3 pcs of Tomato - Cut 4
7.) Salt and Sugar to taste
8.) 2 tbsp Chili Sauce
TO BE GROUND FINELY:-
1.) 4 pcs of Onion
2.) 5 pcs of Red Onion
3.) 5 pcs of Garlic
4.) 2 cm of Ginger
5.) 15 -20 pcs of Dried Chili - Soak in hot water and blend.
TO BE CHOPPED:-
1.) 3 pcs of Onion / Holland
2.) 2 pcs of Garlic
3.) 2 cm of Ginger - Slice to 3 pcs
PREPARATIONS:-
↦ Heat up the oil in the pan. Put anise, cinnamon, chopped ingredients and the ingredients that has been ground finely.
↦ Put the Chili sauce and saute until the ingredients fragrant and you can see the oil layer on top of the ingredients.
↦ Pour in the fried chicken into the ingredients and saute until the ingredients covered the chicken.
↦ Pour water and stir for awhile.
↦ Pour the Coconut milk until the gravy is thick.
↦ Put the sliced tomato and salt.
↦ Add in some sugar (optional) to taste or to reduce the spicy.
↦ Cook for awhile.
↦ Put off the stove and serve the "Ayam Masak Merah"
AYAM MASAK MERAH

The last dish is "Acar Timun Mentah" which is prepared raw. This food is popular in Kelantan especially during ceremony or celebration.
ACAR TIMUN
INGREDIENTS:-
1.) 3 nos of Cucumber - Medium Size
2.) 1 nos of Carrot
3.) 5 nos of Red Chili - Fresh
4.) 3 nos of Bombay Onion
5.) Vinegar
6.) Salt and Sugar
PREPARATIONS:-
↻ Clean the cucumber, carrot, chili and onion.
↻ Slice the cucumber and carrot into long and small pieces.
↻ Chop the onion and chili finely
↻ In a bowl, mixed the vinegar, salt and sugar.
↻ Put the chopped and sliced ingredients into the bowl.
↻ Stir until all the ingredients mixed well.
First of all, we need to prepare "Nasi Minyak" as it is the main subject in this topic today.
